I haven't made this particular recipe, but I do something similar and like to cook my eggs all the way through too. The trick is to keep your heat off high - you might have to experiment with temp settings a few tries to find your sweet spot as I've found it can vary by bread thickness, etc - and put a lid on the pan to hold the heat in.
