This is an expensive recipe to make, so I wouldn’t set out to do it on a budget. 700g of King Oyster Mushrooms runs about £18 or so for good quality ones and you will want good ones here.
The original recipe is incorrect, I’ve changed the oil, soy sauce & spice quantities here to reflect how I made it which worked quite well. The original amounts aren’t enough to evenly coat a fraction of the mushrooms in the liquids… I think somebody made a mistake here.
The pancake recipes is vague about what’s required, and it’s also - oddly - a wheat and not a rice flour dough. What you’re looking for is something that is not sticky AT ALL, and have decent gluten development. Otherwise you’ll have a trial on your hands (as I did) rolling them out.
Could easily be made in advance though, and would be good as part of a dim-sum/Chinese finger food buffet.
