I found I needed to double the amount of yeast. My family prefers a sweeter version so I bake the bread with 1 cup sugar. I also add the zest of one orange and then juice the orange for additional flavor. My egg wash includes a tablespoon of sugar which gives the bread a glaze that is more glossy and an incredibly texture. I can make two large loaves or four smaller loaves. I use the four loaves when we have guests so someone can take a loaf home. I make it Thursday after work and refrigerate my last rising. That way I am not rushing before Shabbat.
