I used a lower temp on my Foodi XL smart grill, and still needed less time for mine to be done. That may have been partly the difference in equipment but also I cooked them to 145 instead of 165. I had two smaller ribs in the batch that got to 160, resting to 165, and they were very dry to me, but my 8yr old liked them.
I used a low fodmap sweet and spicy dry rub from fodmapeveryday.com which was fantastic despite lacking onion and garlic. And I used sweet baby ray’s bbq sauce.
If you’re cooking country ribs slowwww, like smoking them over a few hours, you can cook them to 210+, but seriously don’t grill them above 150. Just don’t.
