First time every frying potatoes in cast iron, they came out pretty good. I added some chopped peppers and onion when the potatoes seemed about half done (20 minutes). My mixture seemed a little shallow for cooking the eggs in the oven, so I put them on top of the potatoes and put a lid on the pan to make sunny side up eggs.
