If texture bothers you then this isn't your recipe. Roasting the veggies makes them really mushy (mine were at least. Maybe I did it wrong?) The actual food tasted good but the texture was too mushy for me

Thanks, Stephanie! I agree with this. However, it depends on how you roast your veggies. You can buy roasted peppers from the shop if you'd like firmer texture. The eggplant should also be roasted whole to avoid it becoming mushy with a minimal amount of or no oil. I hope this helps! Let me know if you try it again this way and if you like it better!
