I made a few tweaks to this recipe and I think it's perfect. I went with a nice artisan loaf and crisped my slices up with a little olive oil and pepper. I also used red pepper hummus to add a little sweetness and a little bit of feta because I just love feta. Literally the only downside to this sandwich is the fallout. So many veggies on the plate afterwards! But such a delicious, healthy and easy meal.
