This was delicious!! I made a batch to try it and I’m about to make a second one to freeze. I added some paprika, red pepper flakes, and dry sage since I like it a bit spicier but it had a wonderful flavor. I also need to eat gluten free, so I used a mixture of lentils, brown rice, and quinoa instead of the couscous and it turned out great. I would suggest adding a bit of water when you reheat it as the couscous/lentil mixture tends to soak up some of the broth. I made it all in my InstantPot on sauté for the veggies and also sauté to get it boiling (use the “more” feature with sauté”) if you are looking for a one pot easy clean up. I will definitely be making this again and keeping this recipe!
