This is a great structure for your own modifications. I cut the sugars in the custardy base by 1/3-1/2 and entirely skip the topping, if I'm serving this with butter and maple syrup. If I take it for a potluck/brunch situation, I will make the topping as written in the original recipe. Either way, I always serve it in much smaller portions for the sake of both my diabetes and my waistline. Despite all of the things that I change when I make it, this is my go to recipe for a custardy, flavorful French toast breakfast at home.
