Not the best -- the rice got pretty mushy and the instructions on how long it stays in the oven are pretty off; we should have pulled it out after 15 minutes, but the 5 more minutes in there made the cheese go from melty to a solid hard layer. I would skip all of the vegetable chopping/tomato sauce and just use a good store-bought salsa tossed in with the rice and beans before baking. I added some shredded chicken, which maybe made it a little drier than it should have been.
