So I did a slight variation on this one, again using my air fryer, and it proved delicious!!! I definitely will do it again. So I made the homemade spinach pesto also found on the jar of lemons website the night before and put it on the top of the salmon along with some extra garlic and goat cheese. My husband forgot to pick up walnuts, so we had pecans in the house, which I also used on the top, and then a few slices of lemon. I use air fryer liners just because I find it easier to lift things like fish and things that might have sauces that run all over out of our air fryer. It works super slick! I put the tomatoes in our dutch oven on our stove top with a little bit of oil and salt, and then I couldn’t help myself and added some balsamic vinegar and let them simmer down until the salmon was done in the air fryer. I added them together, and bon appétit! I maybe could’ve taken it out of the air fryer a few minutes soone, but it was done perfectly throughout, and it had a great crust on top.
