I used penne because it's easier for my kids (5&3yo) to eat.
I also used parmesan cheese because that's what I had, and I added a cup of pasta water to the sauce because I was worried it wasn't enough sauce for all the veggies and noodles. The flavor was SO good on this, but I wish I wouldn't have added quite so much liquid without increasing the other ingredients so the sauce stayed thicker. I also added 1.5 cups of chopped chicken to add some protein.
Total keeper recipe!!! I served it in bowls with garlic bread made from leftover hamburger buns (butter, garlic salt, Italian seasoning toasted in the oven. Sometimes I add cheese but not with this)
Hubby, me, and both kids loved it and they all asked me to make this one again sometime soon.
