I really like this recipe, however i actually prefer it simpler and don't add the peas and the celery. For the chicken, i don't use boneless, I use a chicken leg with all bones and skin to it (i remove them when cutting the meat, of course). Using best quality, organic ingredients make a world of a difference for such a simple recipe and in my opinion, if you cook with boneless, supermarket meat it probably won't have much of a taste. It is my go to! :-)
