Smothered Chicken Texas Roadhouse (Copycat Recipe)

It only marinated for about 15 mins because I had to do a last minute recipe change due to missing ingredients.. But I cooked it in all of the marinade. When finished cooking, I removed the chicken and added a lil corn starch to the remaining marinade to make a gravy for our mashed potatoes. It was AMAZING!! Will definitely be making this again and again!

We started the chicken marinating yesterday but ended up eating something else for dinner. So the chicken got to marinate for 24 hours. My old man believes this would not have turned out as good as it did if we had only done the hour called for. We can't eat sliced onion, so that ingredient and step were omitted. We only used a splash of lemon juice because we aren't fans. We eyeballed the seasonings. We only used 1 slice of Jack per breast. We feel we should have used 2 per breast. This was amazingly delicious. The sauce is kind of like a teriyaki sauce but also different. It's definitely a go-to.

Could do with less mushrooms.
