Ingredients

½ cupunsalted dairy-free butter
melted

¾ cupgranulated sugar

1egg

1 teaspoonvanilla extract
or vanilla paste

1 ¾ cupsalmond flour

½ teaspoonbaking powder

⅛ teaspoonsalt

¼ cuprainbow sprinkles

½ cupunsalted dairy-free butter
softened to room temperature

1 ¾ cupspowdered sugar

1 tablespoonsnondairy milk
if needed

3 tablespoonsrainbow sprinkles
Instructions
Step 1
Preheat oven to 325 degrees and line an 8×8 baking dish with parchment paper
Step 2
In a large bowl, using a stand mixer or hand mixer cream the butter and sugar
Step 3
Beat in the egg and vanilla extract
Step 4
In a separate bowl combine almond flour, baking powder and salt
Step 5
Add dry ingredients to wet ingredients and combine well, then mix in sprinkles
Step 6
Transfer to baking dish and bake for 33-35 minutes. Allow to cool for at least an hour
Step 7
To make the frosting, cream butter in a large bowl until soft and fluffy
Step 8
Beat in the powdered sugar 1/2 cup at a time until all combined, adding milk if needed to bring together
Step 9
When the cookie bars have cooled completely, spread on a layer of the frosting, then sprinkles. Cut into 12-16 squares
