Instructions
Step 1
Preheat the oven to 350 degrees Fahrenheit.
Step 2
Add rolled oats to a blender. Blender until smooth, shake the blender or use a spoon to move the blended oats to the tops, and blend again. Repeat until oats have become a flour.
Step 3
In a medium sized bowl, combined butter, white sugar and brown sugar. Mix until combined.
Step 4
Add eggs and vanilla extract. Mix until combined.
Step 5
Add oat flour, baking soda and salt. Fold until wet ingredients.
Step 6
Add chocolate chips and fold into batter.
Step 7
Form balls with your hands. Add to a parchment paper lined cookie sheet.
Step 8
Bake for 12 minutes or until crispy around the edges.
