Instructions
To make the crust
Step 1
Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the almond flour, coconut flour, honey or sugar, butter, egg, and salt. Mix well to form a dough.

Press the dough into a 9-inch tart pan with a removable bottom, making sure to press it evenly across the bottom and up the sides.

Bake the crust for 10-12 minutes, until it is lightly golden brown. Remove from the oven and let cool.
To make the filling

In a medium mixing bowl, whisk together the lemon curd, lemon juice, lemon zest, and sugar.

Slowly fold in the whipping cream to get a consistent mixture.

Spread the mixture on the crust and let it cool in the fridge for a couple of hours.
To make the raspberry topping

In a small saucepan, combine the raspberries, honey, and cornstarch.

Cook over medium heat, stirring frequently, until the raspberries break down and the mixture thickens into a jam-like consistency.

Spoon the raspberry topping over the cooled tart, spreading it evenly across the top.

Chill the tart in the refrigerator for at least 1 hour. Decorate it with whole raspberries, peach slices, or any fruits you like.

Slice, serve, and enjoy.
