Ingredients: 2 beetroots, ends trimmed and skins left on; 1/2 butternut squash, peeled and chopped into 2cm cubes; 1-2 tablespoons olive oil; 1 pink grapefruit; 2 smoked peppered mackerel (230g), skin peeled off and flesh flaked with a fork; Packet of mixed salad leaves (I used rocket and beetroot leaves); 1 tablespoon grapefruit juice; 1 tablespoon red wine vinegar; 2 tablespoons olive oil; 1 teaspoon honey; 1 tablespoon fresh dill leaves, finely chopped
