Enmoladas (Chicken Mole Enchiladas)

This is pretty good. I can seldom leave the chicken naked in the tortilla, though, but a little avocado makes a nice addition. Of course if you make your own mole it becomes a lot more time consuming but perhaps equally more delicious. And then you can switch up the moles.
