This Gluten-Free Monster Cookie Bread has all the flavors of the cookie favorite, but in a soft & dense cake bread form! Full of peanut butter flavor, oats, M&Ms and chocolate chips.

Ingredients

⅓ cupunsalted butter
melted
½ cupgranulated sugar
½ cupbrown sugar
packed
1egg
1 teaspoonvanilla extract
or paste
¼ cupcreamy peanut butter
½ cupmilk
1 ¼ cupgluten-free flour
1 teaspoonbaking powder
¼ teaspoonbaking soda
¼ teaspoonsalt
¼ cupgf rolled oats
⅓ cupmini M&Ms
⅓ cupmilk chocolate chips
or dark
½ cuppowdered sugar
1 tablespoonmilk
mini M&Ms
or sprinkles, for topping
Instructions
Step 1
Preheat oven to 350 degrees
Step 2
In a large bowl mix together butter and sugars, then egg and vanilla extract, then peanut butter. Lastly mix in milk until all wet ingredients fully combined
Step 3
In a separate bowl mix together flour, baking powder, baking soda and salt
Step 4
Add dry ingredients to wet ingredients and mix just until combined, then fold in the oats, M&Ms and chocolate chips
Step 5
Transfer batter to a parchment-lined + greased loaf pan and bake for 50 minutes, or until a toothpick comes out clean
Step 6
Let cool for 20 minutes in pan, then use a butter knife along edges to remove and transfer to a cooling rack. Let cool completely before topping with glaze
Step 7
To make the glaze, whisk powdered sugar and milk until a smooth consistency, adding more milk if needed
Step 8
Pour/spread glaze over the bread, then top with crushed M&Ms
