Hot Cocoa Cookies are such a fun and delicious treat for the holiday season. They are soft, chewy, and of course chocolate-y.

Instructions

Step 1
Preheat oven to 350 degrees and line baking sheets with parchment paper
Step 2
Using a stand mixer or a hand mixer cream butter, white sugar and brown sugar.
Step 3
Beat in the egg and vanilla extract
Step 4
In a small cup combine hot water & baking soda until it dissolves completely, then beat into wet mixture
Step 5
In a separate bowl combine flour, cocoa powder, salt and cinnamon
Step 6
Beat dry ingredients into wet ingredients 1/2 cup at a time
Step 7
Stir in chocolate chips
Step 8
Refrigerate dough for at least 15 minutes
Step 9
Form into 20-22 balls and place on baking sheet at least 2 inches apart
Step 10
Bake for 8 minutes. Press halved marshmallow onto top of each cookie, and bake for another 2-3 minutes until slightly melted
Step 11
Transfer to a cooling rack and finish with a sprinkle of shaved chocolate
