Snacking Cucumber Salad
The salad has enough vinegar (by itself and as a part of mayonnaise) and salt to stay safe out of the refrigerator for a day.
Use 1 part of vinegar to 2 parts of mayo.

Instructions
Step 1
Slice the cucumbers and toss with the salt. Place in a sieve or colander and allow to drain for about an hour.
Step 2
In a serving bowl, mix the mayonnaise, vinegar, and pepper. Taste the saltiness of the cucumbers; if too salty, rinse under the tap, and shake off the water.
Step 3
Mix the cucumbers into the dressing, adjust the seasoning.
Step 4
Place in the fridge for an hour before serving.
