Step 1
Cream together the butter and sugar until fluffy. Add the eggs, lemon zest and lemon juice.
Step 2
In another bowl, whisk together the flour, oats, baking powder and salt. Add the dry ingredients to the wet ingredients. Refrigerate the dough for about 1 hour.
Step 3
Shape the dough into balls and place on parchment paper-covered baking sheets. Use a glass drinking cup to gently flatten the cookies. (If the dough sticks, spray the bottom of the glass with nonstick cooking spray.)
Step 4
Bake in a preheated 375-degree F oven for about 6 to 8 minutes or until lightly browned. Remove to cool.
