Ingredients

2 cupsall-purpose flour
For the cake
2 cupsgranulated sugar
¾ cupunsweetened cocoa powder
2 teaspoonsbaking powder
1.5 teabaking soda
1 teaspoonsalt
1 teaspoonespresso powder

1 cupmilk
½ cupvegetable oil
2eggs
2 teaspoonsvanilla extract
1 cupwater
1 cupheavy cream
For the chocolate ganache
8 ouncessemi-sweet chocolate

Instructions
Step 1
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans.
Step 2
In a large mixing bowl, combine the flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
Step 3
Add milk, vegetable oil, eggs, and vanilla to the flour mixture. Mix well until the batter is smooth and well combined.
Step 4
Gradually add boiling water to the batter, mixing continuously. The batter will be thin, but that's okay—it ensures a moist cake.

Divide the batter evenly between the prepared cake pans.
Step 6
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and allow to cool for about 10 minutes, then remove from the pans and cool completely on a wire rack.

While the cakes are cooling, prepare the chocolate ganache. Heat the heavy cream in a small saucepan over medium heat until it's hot but not boiling.

Remove the cream from heat and add the chopped chocolate. Let it sit for 5 minutes, then stir until the chocolate is fully melted and the mixture is smooth.

Let the ganache cool for about 15 minutes, then spread it over the cooled cakes. You can layer the ganache in between the two cakes and also on top.
