Instructions

Step 1
Wash and pit the cherries
Step 2
Now we are going to prepare the cherries for the ice cream. Put the prepared cherries into a small saucepan with 3 tablespoons of sugar and 1 tablespoon of water.
Step 3
Bring cherries to a boil over medium heat and cook, stirring constantly, and using a potato masher to mash the cherries for about 4 to 6 minutes, or until the cherries are soft and syrupy.
Step 4
Simmer the cherries on low heat until the sauce starts to thicken. Once the cherry sauce is thick, remove from heat, Put it in a container, cover it, and refrigerate.
Step 5
Next, let's prep our cherry ice cream mixture. Gather the heavy cream, vanilla extract, and sugar.
Step 6
In a large mixing bowl, combine the heavy cream, condensed milk, vanilla extract, and sugar. Mix until well combined. This is the ice cream mixture.
Step 7
Let's make our cherry ice cream! Add the prepared ice cream custard to an ice cream machine. Let the machine mix the ice cream for at least 20 minutes. The longer the better peaks your cherry ice cream will have. After 20 minutes of churning, add the cooled cherry syrup to the ice cream machine.
Step 8
While our chocolate cherry ice cream is churning in the ice cream machine, we are going to melt the chocolate chips. Adding melted chocolate at the end of the ice cream process, will make chocolate chips and ensure the cherry ice cream mixture is nice and smooth. Melt the chocolate with the coconut oil in a bowl over simmering water. Let it cool slightly and put it in a small food storage bag. If it hardens, place the bag in warm water.
Step 9
When the ice cream is soft frozen, cut a tiny piece off of the corner of the bag and drip chocolate slowly into the churning ice cream. The chocolate will harden in the churning ice cream, creating the chocolate chips.
Step 10
When the ice cream is done, transfer it to a freezer container. Cover and freeze for 24-hours.
