Step 1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2
Start by making the strawberry filling. Combine the strawberries, sugar, and lemon juice in a medium saucepan over medium heat. Cook until the strawberries release their juices.
Step 3
Mix the cornstarch with a little water to make a slurry, then add it to the saucepan. Stir continuously until the mixture thickens, about 2-3 minutes. Remove from heat and let cool.
Step 4
Roll out your thawed puff pastry sheets. Cut each sheet into 8 rectangles.
Step 5
Place a spoonful of the strawberry filling on one half of each rectangle, leaving a small border around the edges. Fold the other half of the rectangle over the filling and crimp the edges with a fork to seal.
Step 6
Beat the egg and brush it over the top of each pop tart. This will give it a beautiful golden color.
Step 7
Bake in the preheated oven for 15-20 minutes, or until the pop tarts are golden brown.
Step 8
While the pop tarts are baking, make the icing. Mix the powdered sugar, milk, and vanilla extract together until smooth. Adjust the consistency by adding more milk or sugar if necessary.

Allow the pop tarts to cool for a few minutes after removing them from the oven, then drizzle with the icing.
