Instructions

Step 1
1. Start by cutting your chicken breasts into strips. You should be able to get about 3-5 strips from every 1/2 pound of chicken. But you can cut them into smaller strips to make more if you prefer. Once your chicken is cut into strips, set them aside.

2. In a large mixing bowl add 2 cups of low fat buttermilk, 1 cup of hot sauce (any brand you prefer is fine), and 1 cup of pickle juice. Mix well then add in your chicken strips. Mix the chicken strips into the brine/marinade to coat well. Cover and refrigerate overnight.

3. Once your chicken is done brining and you are ready to cook, remove your strips from the brine/marinade one at a time, wipe off the excess buttermilk, and lay them out on a wire rack. Pat with a dry cloth or paper towel to remove excess moisture. Flip them over and repeat on the other side. Let the chicken rest for 10-15 minutes at room temp.
Step 4
4. While your chicken is resting, start on your seasoning. In a bowl add 1 Tbsp garlic powder, 1 Tbsp light brown sugar, 1/2 Tbsp cayenne (more if you want more heat), 1 tsp salt, 1 tsp black pepper, 1 tsp smoked paprika, 1 tsp onion powder, 1/2 tsp chili powder, and 1/2 tsp MSG. Mix well. Transfer to an empty seasoning bottle if you have it.
Step 5
5. Season all of your chicken strips liberally with your seasoning mixture. Be sure to cover the entire strip, including the sides and ends.
Step 6
6. Air fry on 390°F for about 10 minutes or until cooked through with desired crispiness on the outside. Season with any additional seasoning you may have leftover.
