Instant Pot Quinoa for meal prep

This is a basic method to cook quinoa so it is ready for meal prep or to incorporate into a recipe. Cooking the quinoa in the instant pot means that you don't have to watch the stove or time the rest of the meal. You can leave it on the "keep warm" setting for hours. You will set the instant pot on high pressure for one minute, but the process of heating up will take a little longer. Just start the instant pot when you have a moment and come back to it when you are ready.

Instructions

Step 1
Measure 1 cup of quinoa (white, red, tricolor, etc). Put in a sieve and rinse. If you are super pressed for time, you can skip this step. Rinsing just removes some of the starchiness from the quinoa and makes it more fluffy.
Step 2
Spray the inner pot with coconut oil spray or vegetable oil spray. Again, you can skip this step, but it adds negligible calories and improved clean up afterwards. Put rinsed quinoa in the sprayed inner pot, then add the 1 1/2 cups water. There is no need to stir.
Step 3
Cover the instant pot and set vent to sealing. Set for manual high pressure 1 minute. Yes, really, it is only one minute.
Step 4
Let instant pot release naturally for 10 min, then do a manual release. Stir to fluff up the quinoa and use in your recipe.
Step 5
You can leave the instant pot on the "keep warm" setting for several hours without harming the quinoa or losing nutrients.
