Pesto Chicken with Lemon Potatoes and Pine Nuts

Instructions

Step 1
Preheat oven to 375 degrees Fahrenheit.
Step 2
Cut the Yukon potatoes into small cubes. Toss them with the 2 Tbsp olive oil, the zest and juice of the lemon, and some salt and pepper.
Step 3
Spray baking sheet and place the chicken breasts along with the potato mixture on it. Drizzle with 1 tablespoon of olive oil on chicken, then season with salt and pepper.
Step 4
Bake for 25-30 minutes, or until it's cooked through.
Step 5
Before serving, top with pine nuts and green onions
