What could be healthier and tastier than a roast pepper roast garlic roast roast Aubergine dip ! This is great paired with everything really but I love dunking a husk of chunky crunchy baguette in . So delicious

Instructions

Step 1
Preheat oven to 200 c /400 f fan setting then wash and quarter the peppers and slice the Aubergines in half . Place all on the baking tray skin side up ( this makes 1 cup double the recipe if you want a larger quantity )
Step 2
Place garlic in tinfoil with salt pepper and a dash of olive oil then place on the same tray and roast everything for 30 minutes . Take the tray out let it cook then peel the skins from the Aubergines and peppers
Step 3
To a food processor add the peeled pepper and Aubergines squeezed garlic cayenne vinegar olive oil and a good pinch of salt and pepper . Blend until smooth then put into a pot and bring to a simmer . Lower the heat then cook a further 20 minutes . Serve hot or cold or store in a sterilized container in the fridge for up to a week
