Lemon Peel Jam 🍋 (only 2 ingredients!)
While testing for my vegan lemon tart, I always had so many peels that I didn’t want to throw away... Now I always save them in the freezer to add them to my smoothies or make this incredibly delicious confiture 💛

Instructions
Step 1
If frozen, defrost you lemon peels. Weight the peels and calculate the water and sugar to your amount.
Step 2
Finely chop the peels.
Step 3
Boil peels in water for 30 minutes.
Step 4
Add the sugar and let it simmer for another 15 minutes. Optionally blend as rough or fine as you prefer.
Step 5
Carefully pour into sterilized jars and let it cool.
