Tomatillo and Potato Soup

A different take on tomato soup made with Tomatillos and Potatoes. Swap the tomato juice for 1 cup of the reserved tomatillo juice.

Ingredients

2 Tbspolive oil
2 CupsTomatillos Canned
Drained, juice reserved
12 ozOnion Dice
Large

1 cuptomato juice

1 ½ tspground cumin

1 cupheavy cream

1 tspOregano
Fresh

1 TbspCilantro
Rough Chop

3 LbPotatoes
Peeled Large Dice

1 cuppepper jack cheese shredded

2 tspsalt

2 QtWater
Hot

2 TbspChicken Base
Instructions
Step 1
Heat oil in sauce pan, Sweat onions, add Cumin and Oregano.
Step 2
Mix chicken base and hot water well. Add to a pot with the potatoes, Salt and cup of tomatillo juice.
Step 3
Simmer potatoes until fork tender. Add tomatillos, simmer 10 minutes to allow the flavors to blend.
Step 4
Add cilantro and pass the soup through a food mix or blender until well blended and smooth. Stir in cheese and season as needed.
