Instructions
Step 1
Put the butter in a heavy bottomed pan and melt, add the onion and garlic and saute until translucent.
Step 2
Add the potato and stir, gently saute for 2-3 minutes
Step 3
Add the broccoli and the stock and bring to a simmer. Cook for 15 minutes until all the vegetables are soft.
Step 4
Remove from heat and allow to cool slightly before blitzing with a hand blender
Step 5
Return to a low heat and crumble in the stilton before seasoning and serving.
