Instructions
Step 1
Pre-heat oven to 180’C and line either a cake tin or a muffin tray with 12 paper cases
Step 2
Open the tin of pineapple and drain away any liquid, (the syrup can be used in the cake in place of the water or milk). Arrange the pineapples and add the cherries.
Step 3
Cream (beat with a white spoon) the margarine / butter and sugar until light and fluffy
Step 4
Add the eggs one at a time and beat well
Step 5
Sieve in the flour and fold in using a spoon
Step 6
Add a little syrup, milk or water to make a soft consistency which will drop off the spoon quite easily.
Step 7
If it’s a large cake, cover the pineapples with all the mixture. Or, if making muffins, place a spoonsful of the mixture over the fruit, make all the cakes the same size
Step 8
Bake in the centre of oven for about 20-25 mins, or until well-risen, golden & firm to the touch.
Step 9
When cooler, turn the cake over, you can cover with golden syrup if you wish
