Instructions

Step 1
1. Prep. Preheat oven to 350° and place a rack in the center position. Prepare metal 8x8 pan by spraying with cooking spray and lining with parchment paper.

2. Make the butterscotch pieces. Add dark brown sugar, water, kosher salt, vanilla paste & butter to a saucepan. Bring the mixture to a boil, over medium-high heat stirring to dissolve the sugar. Reduce the heat to medium and continue to cook stirring frequently. Monitor the temperature with a candy thermometer or instant-read thermometer. When the mixture reaches 260°F, immediately remove the saucepan from the heat. Pour onto a baking sheet lined with silpat or parchment paper and place in the freezer to set.
Step 3
3. Make the brown butter. Clean out the saucepan. Bring the butter to a boil over medium-high heat. Reduce to medium heat and stir constantly, scraping the bottom and sides of the pan. When the bubbling subsided and you see floating golden specks, remove from the heat and transfer to a bowl. Add 2 ice cubes to the bowl and stir until the ice is melted.
Step 4
4. Make the batter. Mix the dry ingredients: all-purpose flour, kosher salt, baking soda and whisk to combine. Once the butter has cooled to a little warmer than room temperature, add the light brown sugar and whisk together until well combined. Add eggs one at a time to the butter/sugar mixture and beat together. Add the vanilla extract. Add the dry ingredients and whisk until incorporated. Set batter aside to firm up.
Step 5
5. Mix in the butterscotch. Take the butterscotch out and break into bite-size pieces. Mix 2/3 of the butterscotch pieces into the batter until evenly blended. Pour batter into prepared pan and spread into an even layer. Add the remaining third of the butterscotch pieces to the top of the batter. Sprinkle flaky sea salt on top.
Step 6
6. Bake, slice and serve. Bake at 350 for 40 mins. Look for the surface to be super golden brown, a little bit wrinkly in the corners, puffed, and just firm to the touch in the center. Take out of the pan and let cool on a metal rack. Loosen from parchment paper and slice into 16 even squares with a serated knife.
