Step 1
Preparing the Dry Ingredients: In a large mixing bowl, sift the plain flour, finely ground oat flakes, baking powder, and a pinch of salt. If you enjoy the taste of cinnamon, feel free to add a pinch or two to the dry ingredients for added flavor.

Preparing the Wet Ingredients: In another bowl, take three ripe bananas and mash them into a smooth puree using a fork or a potato masher.
Step 3
Add the cooled melted butter, beaten eggs, sugar, Skyr, and vanilla paste (or vanilla extract) to the banana puree. Mix all these wet ingredients together until well combined.
Step 4
Combining the Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until you achieve a smooth and consistent batter. Avoid over-mixing to maintain the cake's light texture.
Step 5
Add the chopped chocolate into the batter and gently fold it in until evenly distributed.

Preparing the Cake Pan: Line an oblong cake pan with baking paper to prevent sticking and ensure easy removal of the cake after baking.

Pour the cake batter into the prepared cake pan, spreading it evenly.

Adding a Finishing Touch:
Take the remaining ripe banana and cut it into halves or quarters. Place these banana pieces on top of the cake batter in the pan, evenly spacing them.
If desired, chop some almonds and sprinkle them over the top of the cake, adding a delightful crunch to the final product.

Preheat your oven to 180°C (356°F) while assembling the cake.

Once the cake is ready, carefully place it in the preheated oven and bake for approximately 50 minutes or until a toothpick inserted into the center comes out clean.

Cooling and Serving:
Once the cake is done baking, remove it from the oven and allow it to cool in the pan for a few minutes.
Transfer the cake to a wire rack to cool completely before serving.
