Step 1
In a large saucepan, combine the granulated sugar, unsalted butter, milk, pumpkin puree, pumpkin pie spice, ground cinnamon, and ground nutmeg.

Cook the mixture over medium heat, stirring constantly, until it comes to a rolling boil.
Step 3
Boil the mixture for 1 minute, stirring constantly.
Step 4
Remove the saucepan from the heat, and quickly stir in the quick-cooking oats, vanilla extract, and chopped nuts (if using).
Step 5
Drop spoonfuls of the cookie mixture onto wax paper or parchment paper.
Step 6
Let the cookies cool and set for about 30 minutes before enjoying them!
