Batter:
“Breadcrumb” Mixture:
Instructions
Step 1
Soak cashews for 20 minutes in hot water, then drain if not using a high speed blender. If using a high speed blender, no need to soak prior.
Step 2
Add cashews, water, arrowroot starch and sea salt to a blender and blend until smooth.
Step 3
Place “batter” into a bowl and mix together the “breadcrumb” mixture into a seperate bowl.
Step 4
Place each avocado slice, one a time with one hand into the batter, then use the other hand to coat in the the breadcrumb mixture.
Step 5
Repeat the process but coating it again in the batter and the breadcrumbs so it is double coated.
Step 6
Place onto a plate.
Step 7
Repeat the process for each avocado slice.
Step 8
Spray the fries thoroughly with avocado oil.
Step 9
Air fry 385F for 4 mins then flip and spray the other side and cook at 395 for 5 mins or until crispy.
Step 10
Cool completely before eating.
Step 11
Serve with ketchup or vegan ranch and enjoy!
