Dry Ingredients
1 ¼ cupbrown rice flour
1 ¼ cupalmond flour
½ cuparrowroot flour
¼ cupcoconut sugar
or brown sugar
2 tspbaking powder
½ tspbaking soda
0.5 Tbspxanthan gum
½ tspsalt

Icing (optional, but dang good):
Instructions
Step 1
Preheat oven to 425°F and lightly grease a 9" x 7" pan.
Step 2
Combine all filling ingredients and set aside.
Step 3
In a small bowl, mix milk and apple cider vinegar together and set aside
Step 4
In a large bowl, whisk dry ingredients together.
Step 5
Set a piece of plastic wrap onto the counter, slightly oil with vegetable oil or brush lightly with coconut oil.
Step 6
Add 2 tbsp of melted butter to the milk and apple cider vinegar mixture. Pour the milk mixture into the dry ingredients and stir to combine.
Step 7
Transfer dough to plastic wrap. Lightly oil your hands and press dough into a 9×13 rectangle.
Step 8
Spread the coconut sugar filling over the dough.
Step 9
Use the plastic wrap, roll the dough.
Step 10
Using a very sharp knife, slice the dough roll into 8 pieces.
Step 11
Place the cinnamon rolls into the prepared pan and bake for 22-25 minutes.
Step 12
While the cinnamon rolls are baking, combine icing ingredients in a small bowl. Allow cinnamon rolls to cool slightly before topping with icing.
