Instructions

Step 1
Prepare Storybook Cookie Dough as found in other recipe.
Step 2
Chop dates and place into a medium saucepan. Add water as needed to achieve a soft paste and heat over low burner.
Step 3
Roll out dough to about 3/8 -1/4 inch thick.
Step 4
Using two round cookie cutters of differing sizes, cut out an equal number of large top layers and smaller bottom layers. (I use two different size drinking glasses for this)
Step 5
Place the smaller circles onto an ungreased baking sheet and place the date filling by spoonful to the center of the circles.
Step 6
Place the larger circle over the date and lower layer and lightly pinch around the perimeter to completely close and cover the filling creating a mound shaped cookie.
Step 7
Create a small slit in the top layer to allow steam to escape and bake at 300* for 12-15 minutes. The cookie should be white and soft, not brown when done.
Step 8
Remove from cookie sheet and allow to cool to keep from breaking or eat warm.
