Instructions
Step 1
Prepare a pan (I’m using an 11x7 inch rectangle pan) by lining it with plastic wrap, making sure to have extra hanging on the outside to cover the top of the ice cream later. Line the bottom of the pan with graham crackers.
Step 2
Whisk the heavy cream to soft peaks using a handheld whisk. Add sweetened condensed milk, vanilla extract, lime zest, lime juice and salt. Whisk everything together for an extra 15 seconds, just enough until everything is combined.
Step 3
Pour the cream mixture over the layer of graham crackers and spread evenly. Line more graham crackers on top. Cover the top of the crackers with the extra plastic wrap lining. Freeze overnight for best results.
Step 4
You can easily remove the ice cream from the pan by lifting it and slicing it into square sandwiches. Serve immediately.
