Instructions
Step 1
Preheat oven to 425 on convection. Heavily oil a cast iron skillet and allow to heat with oven.
Step 2
Clean and dry chicken wings well.
Step 3
Season with Boudreaux's Fire and Smoke and Low and Slow. Dust wings with cornstarch. Rub into all sides.
Step 4
Carefully assemble wings in a single layer in cast iron.
Step 5
Bake for 15 minutes on one side.
Step 6
Make sauce by cooking garlic in butter until soft. Add marmalade, pepper puree and vinegar. Once thick squeeze in citrus
Step 7
Flip wings and bake 15 more minutes. Flip once more and broil for 5 minutes being careful not to burn.
Step 8
Remove and cover with sauce and broil 5 more minutes.
