Instructions
Step 1
Preheat oven to 350 and line baking sheets with parchment paper.
Step 2
Cream together soft butter, sugar, and brown sugar.
Step 3
Strain pumpkin using paper towels to squeeze out SOME of the liquid (not all!)
Step 4
Mix in vanilla extract, eggs, and pumpkin.
Step 5
Fold in flour, baking soda, salt, cream of tartar, cinnamon, and pumpkin pie spice.
Step 6
Form 2 inch dough balls and place on a lined baking sheet.
Step 7
Make cinnamon sugar combining 1/3 cup sugar, 1 1/2 tbsp cinnamon, and 1 tsp pumpkin pie spice.
Step 8
Roll dough balls in cinnamon sugar mixture so they are fully coated.
Step 9
Bake at 350 for 10 minutes.
Step 10
Let cool and enjoy!
