Low carb snack to satisfy your sweet tooth without increasing glucose levels. The key to this is quality dark chocolate and peanut butter that doesn't have any extras. I prefer Simple Truth 72% Cacao Dark Chocolate Chunks and Trader Joe's creamy peanut butter. Try crunchy peanut butter if you want more texture. Best stored in the refrigerator to keep from melting at warm temperatures.

Instructions

Step 1
Melt chocolate using a double boiler
Step 2
Pour enough chocolate to cover the bottom of the mold

Add 1/2 teaspoon peanut butter on top of the chocolate
Step 4
Pour chocolate to cover the peanut butter
Step 5
Put in freezer or refrigerator to firm up
Step 6
Pop out of the mold and enjoy!
