These muffins make for a great breakfast, are super easy, and are a great way to use up old bananas. Gluten-free flour can be swapped for regular flour.

Instructions

Step 1
Preheat oven to 375⁰F. Line a muffin pan with paper backing cups.
Step 2
In a medium bowl, whisk together the flour, oats, coconut sugar, baking powder, baking soda, and salt.
Step 3
Add the mashed bananas, eggs, and melted ghee or coconut oil and mix well.
Step 4
Spoon the battery evenly into muffin cups.
Step 5
Bake 20-25 minutes. Serve warm or at room temperature.
