1 headradicchio
8watermelon
or regular radishes, thinly sliced
2 cupswhite cheddar cheese
crumbled, or grated
1 cuppecans

Salad
Step 1
Gently tear the lettuce and radicchio leaves and place them in a large bowl. Add the radishes, Cheddar, and pecans. Add enough dressing to coat the leaves and toss gently. Serve immediately.
Vinaigrette
Step 2
1. In a 16-ounce screw-top jar, combine the oil, vinegar, lemon juice, mustard, pepper, salt, and 3 tablespoons water. Screw on the lid and shake vigorously until well blended.
Step 3
2. Use at once or store in the refrigerator for up to 1 week.
