Coconut Ice

Coconut Ice is a treat that’s very popular in Great Britain, Australia and New Zealand. It’s a no-cook confection made of powdered sugar, sweetened condensed milk, and coconut. It has a chewy, slightly grainy texture. They are similar to what Americans may know as Brach’s Neapolitan Coconut candies.

Step 1
Line an 8×8-inch baking pan with parchment paper of aluminum foil, leaving an overhang so that you can lift it out. Sift together the powdered sugar and cream of tartar. Add the condensed milk, vanilla and coconut and stir until combined. You may need to knead this with your hands. Divide the mixture into two equal portions, and color one of the portions pink with your food coloring. Press the white portion into the bottom of the prepared baking pan, pressing firmly to get a solid layer. Carefully top with the pink portion, also pressing firmly. Refrigerate for at least two hours or until set. Lift the coconut ice out of the pan by pulling up on the overhanging parchment or foil, then place on a cutting board. Remove the paper/foil and slice into squares with a sharp knife.
