Instructions
Step 1
Cut the apples up into quarters. Place in a large stockpot or crockpot.
Step 2
Add enough water to cover the apples by 2 inches (apples will float, so push them down)
Step 3
Stir in the brown sugar, cinnamon, and allspice. Bring to a boil uncovered for 1 hour.
Step 4
After the boiling, cover the pot, reduce the heat, and simmer for 2 hours.
Step 5
After simmering, let the mixture cool a bit before straining into a bowl through a cheesecloth. Disregard the solids and drain the liquid one more time through the cheesecloth.
