Instructions
Step 1
In a large saucepan, place cut up sweet potatoes and cover with cold water. Bring to a boil. Potatoes are done when tender (about 20 mins). Drain potatoes and mash until smooth (can use electic beater

Beat in softened butter and sugar.
Step 3
Add beaten eggs to cold milk and mix lightly. This prevents the eggs from cooking in the hot potatoes.
Step 4
Add milk/egg mixture, vanilla and nutmeg and mix until smooth and well blended.
Step 5
Spoon mixture into a 3 quart baking dish that has been buttered or sprayed.
Step 6
Preheat oven to 350 degrees.
Step 7
For the topping, combine melted butter, brown sugar, and flour until well combined. Mix in chopped pecans.
Step 8
Sprinkle topping on top of sweet potato mixture.
Step 9
Bake for 35 to 40 mins or until topping is lightly browned.
