Instructions
Step 1
Line 2 x 21.5cm baking tins with baking parchment.
Add the lemon juice to the milk & mix. Leave to curdle for a few minutes

Pre-heat oven to 160°c
Step 3
Sieve flour, cocoa, instant coffee & baking powder together.
Step 4
Cream the butter & sugar together until light & fluffy.
Dissolve the bicarbonate of soda in 1 tbs of boiling water
Step 5
Beat in 1 tbs of the flour mixture. Add the beaten egg, flour mixture, and curdled milk alternately, a little at a time. Stop adding the milk if the batter becomes too liquid. The batter should just hold its shape
Step 6
Beat in the dissolved bicarbonate of soda & vanilla extract.
Step 7
Divide the batter between the cake tins evenly. Bake for 30 - 40 minutes or jntil the cake shrinks from the sides of the tins.
Step 8
Leave in the tins for a few minutes before turning out onto a cooling rack.
Step 9
Sandwich together with you favourite filling when cold, then decorate the outside too.
